My First Recipe will be the Beef Stir Fry in the Main Pic - 2 Serves
Marinate the meat in the Tamari or Soy sauce for at least 30 mins, or while the rice cooks. A whole day or overnight is best.
Wash the rice in cold water & drain. Add 2 cups cold water, bring to boil, cover & leave to cook 20-35 mins.
When the rice is cooked, begin cooking the stir fry.
Add the oil to a fry pan, wait a few mins for it to heat then add the onion & garlic.
Add the carrot, celery, capsicum & broccoli, mushrooms etc. Stir fry a minute or so, then add a splash or two of very hot or boiling water to cook the veges.
Remove from pan to keep warm in a bowl, & reheat the pan, adding a little more oil.
Stir fry the beef for only 2-3 mins, on a medium heat, keeping it moving.
Add the veges back in, toss to heat, and add the last measure of tamari mixed with the water & cornflour.
Check the taste for seasoning, add a little salt & pepper if necessary.
Serve with or on the rice
- 300g Rump Steak, Snitzel or Stir Fry Beef strips
- 1/2 red onion, chopped
- 1-2 cloves garlic, crushed
- 2 carrots, peeled & sliced
- 1/2 head broccoli or cauliflower, cut into small florets. Peel & chop the stalk too.
- 3 sticks celery, sliced
- 1/2 green or other coloured pepper / capsicum
- sliced button or other mushrooms if you like them
- 4 Tbs Tamari or Soy Sauce for marinade
- 1 Tbs good quality oil, eg: rice bran or grapeseed or olive
- 1 tsp cornflour / cornstarch / arrowroot, mixed with 1 tsp tamari & a little cold water to a thick paste
- Freshly ground Salt & Pepper to taste, added at the end of cooking
- 1 cup brown rice
