Spice Mix:
2 Tbs Paprika 1 Tbs ground coriander 2 tsp ground cinnamon 2 tsp chilli flakes 1 tsp ground allspice 1/2 tsp ground cloves 1/2 tsp cardamom seeds | Ingredients for rest of the dish - Serves 4 30ml olive oil 2 medium parsnips, chopped into bite size pieces 3 medium onions, chopped 4 medium carrots, chopped 6 pitted prunes, chopped into 1/4s freshly ground black pepper 8 cloves garlic, crushed 2 Tbs tomato paste 400g can diced tomatoes 2 cups orange juice (I squeezed my own) 2 cups water 6 sausages (pork would be good) yoghurt & parsley to serve 1/2 cup dried couscous per person nb: I added peas, you can add other vegetables if desired |
Method:
- Mix all the spice mix ingredients together. You'll use all of it in the dish. It seems a lot but is absolutely delicious!
- Brown the sausages in a couple of spoonfuls of the oil until browned on all sides, set aside
- Add the spices to the pan, mix and add the parsnips, onions, carrots, prunes, pepper, garlic, tomato paste, tomatoes, orange juice, and water.
- Cover and simmer gently for 40 minutes.
- Add the sausages, cut into chunks, and cook a further 10 mins until they are cooked through.
- Season with a little salt if necessary.
- Bring 1/2 cup water per 1/2 cup couscous to the boil. Add a little oil, then the dry couscous. remove from heat and stir well. Cover & leave 2-3 mins. Stir with a fork to separate the grains.
