Best Ever Carrot Cake
1 1/2 cp oil
2cp raw sugar
4 eggs, lightly beaten
1 tsp vanilla
2 cp wholemeal flour
1 1/2 tsp cinnamon
1 tsp salt
3 cps grated carrot (2 lge)
2 tsp baking soda
Method:
- Mix oil & sugar
- Add egg & vanilla very slowly, beating well
- Add rest of ingredients & mix until combined
- Bake 55-70 mins 160oC until firm in the centre 20cm cake tin
Icing:
1 tub cream cheese
3/4 cp icing sugar
1 tsp vanilla
1/4 cp melted butter
Blend all together & ice cake when cold. (Keep in the fridge between snacks as the icing is a dairy product)

Icing: lite cream cheese won't work in this recipe
